1 cup uncooked bulgur
1/3 cup dried cranberries
1 cup boiling water
3-4 tablespoons fresh lemon juice
1 1/2 tablespoons olive oil
1 clove garlic, minced
1 cup cooked chickpeas
1/2 cup minced fresh parsley
salt & pepper
Combine bulgur and cranberries in a large bowl. Pour boiling water over bulgur mixture. Cover the bowl with foil (or a lid of some sort). Let stand until all the water is absorbed and bulgur is tender, about 30 minutes.
Meanwhile, whisk the lemon juice, olive oil, and garlic together in a small bowl.
Once bulgur is cooked add dressing, chickpeas, and parsley to the bowl and stir to combine. Season with salt and pepper, to taste.

dan and i will fo 'sho be trying your cranberry-bulghur salad! we looooooove bulghur and dan's favorite is dried cranberries - and i love the sound of it all mixed in with lots of chickpeas, fresh parsley, olive oil, 'n garlic! it's just too awesome - and so pretty, too! yay!

Yum!! This looks incredible! I only recently discovered bulgur (even though I'd been eating Tabbouleh for years, it never occurred to me that bulgur could be used for other stuff :P).

I have never cooked with bulgur and now I want to try.

I made this for my dinner tonight because it's just too darn hot outside to use the stove. It's amazing!!!!!! I subbed spinach for the parsley and sprinkled a few raw sunflower seeds on top. Thanks so much for this recipe, it really is delicious! You can see a photo here:
