Vegan Brunch is here!

I'm a day late, but I have something to show you guys for WIP Wednesday. Better late than never, I guess. I've started beading again since my summer vacation started. Here's the ankle bracelet I just finished:


It's nothing too impressive, but I think it's cute. I actually had to take a picture of it on my wrist because I couldn't get a good picture of it while it was on my ankle.

I haven't been up to anything too exciting lately. It's been raining so much here that I haven't been able to do much outside. It needs to stop raining soon because I am tired of being cooped up in my apartment! I've been spending my afternoons with my new friend Jillian. I've been doing the Jillian Michaels' 30 Day Shred and No More Trouble Zones dvds. I just bought NMTZ and it is awesome! (It's kicking my ass a little bit though) I like doing my exercise dvds so much better than using the machines at the gym. I always feel akward using them.

As most of you are probably aware already, Vegan Brunch came out recently! There are so many recipes in it that I can't wait to try. I've been dying to make the pumpkin pancakes but the stupid grocery store was out of pumpkin! In the meantime I tried some other recipes- Cornbread Waffles and Tofu Omelets. The cornbread waffles were great! They tasted just like eating sweet cornbread (Duh. Sorry for the obvious description, I can't come up with anything else). I made the berry sauce recipe that's in the book too to go on top of the waffles. I couldn't get enough of them, they are definitely on my "make again" list. The tofu omelets were good too, not amazing, but good. I had to make mine smaller than the recipe said though, because I was having trouble keeping them together when I flipped them. (I think I tried to flip too early) They weren't big enough to fold over, so I left them open-faced. I'll probably make these again and experiment with different fillings.

That looks so much like an omelette, it looks very tasty! I tried to make one one and it just stayed liquid. Yours look like a total success!

I can't wait to try those omelets. I love Susan V's tofu omelet recipe, and I bet I'll love this one too. The cornbread waffles are also on my list.

And that bracelet is too cute!

I just got vegan brunch too, I'm so excited about! I've made the english muffins, the chocolate stout brownies, the tempeh bacon and a fritatta . . . I'm super excited to try the omelets.

your ankle bracelet = beautiful! i love the color and how delicate 'n cute it is! oh-so pretty! we've been outside & enjoying the weather, too! and i agree on feeling kinda awkward using the machine at the gym - i may have to check out the shred vids, i hear they rock!

hooray for vegan brunch yummies, too! i love the omelet all open-faced like you've got it - it looks amazing! mmmmmmmmmmmm!
