Ice Cream, Risotto, and a Bake Sale

I feel like I spent all weekend in the kitchen! I've been cooking and baking up a storm these past few days. Here's some of the evidence:

Red Wine Risotto

I made a red wine risotto for dinner on Saturday. It looks kind of funky because it's purple, but it tasted pretty good. Andrew loves risotto and he really enjoyed this one. There was peas and mushrooms in it, but for some reason you can't see the mushrooms in the picture.

I spent Saturday night baking lots and lots of cupcakes for a bake sale that the Raptor Center was having today. Andrew is a volunteer at the Raptor Center and got an e-mail a few weeks ago requesting baked goods for the bake sale. I was happy to help out! I love any excuse to bake! I made the Cookies & Cream Cupcakes and Peanut Butter Cupcakes from VCTOTW. Both recipes are fabulous, but I like the peanut butter one best. (Not surprising, since I am a peanut butter junkie) I sent 2 dozen cupcakes to the bake sale and kept some extra for us.

Those are just a few of the things I made this weekend. Like I said, I feel like I spent all weekend in the kitchen! No complaints though because it was fun! On Wednesday, Andrew and I are going back to New Jersey to visit our families and leave for Disney World a few days later. I sure won't be doing much cooking then, so I guess it's good that I got it out of my system this weekend. Well, I am off to go relax for the rest of the night. Those cupcakes are gorgeous, especially the chocolaty stripes on the PB ones!!

I feel like I spent a lot of time in the kitchen too, but it's so good for us!!!

Those peanut butter cupcakes are one of my favorite recipes in the book. But I still haven't tried the cookies 'n' cream ones. The risotto looks fab. I love red wine!

At first I thought you had made ice cream risotto!! That would've been interesting. Everything looks yummy! Especially the peanut butter flavoured stuff mmm.

also, with pbu instead of pb, the oat bran is under 500 cal by my calculations!

ooh, your green and purple risotto is SO pretty! I bet it was deliciouser for being funky coloured. :)
