Fabulously Fudgy Brownies

Hello my lovely blog friends! I hope you're all doing well. I'm sure some of you are singing the "end of semester blues" like I am. Luckily, I get a little break this week. I only have 2 days of class, then a whole week off until my finals start. Good luck to the rest of you who are taking finals now.

I am very pleased to say that I am doing better these past few weeks. In fact, I feel fabulous! A few weeks ago I decided to go back to the doctor and switch my antidepressants. My old medication was no longer having an effect on me and I was in a
very low place. I'll be honest, it was bad and I was really scared. I wish now that I would have stopped being stubborn and switched medications sooner because I feel like a completely different person. When I was in that dark, scary place I didn't even remember who I was anymore. Depression had been taking control for so long that I forgot what it felt like to be me. Figuring out who I am again (without the depression and ED) is scary too, but in a different way. It's like moving away from home for the first time- you're excited to be on your own, but you're scared and a little unsure of yourself. It's okay though. I would rather take the fear and uncertainty of a healthier, happier life over a life filled with darkness. Like I said, breaking free from all of that feels fabulous.

You know what else is fabulous? The brownies I made this weekend! (You were wondering how this was going to shift to a conversation about food, weren't you?) I had a serious craving for brownies this weekend, so I whipped up a batch of Deluxe Cocoa Brownies from Vegan Cookies Invade Your Cookie Jar. The recipe has been getting rave reviews on the PPK
, so I thought I'd try them instead of my old standby. As usual. the PPK gave good advice because these were some damn good brownies. I was a little skeptical about how the texture would come out because of the tofu in the recipe. For some reason I kept thinking the tofu would make them cakey instead of fudgy, but I was wrong. The brownies were super fudgy and chocolatey -just the way I like them. They were very moist and didn't stick to the pan at all (I always have problems with my brownies sticking to pans). They even had some crackle action on top, like the boxed kind. I haven't decided yet if I prefer these brownies over my standby recipe, but they are definitely a contender. I guess I'll just have to keep sampling them until I make up my mind :)
