Loving life and this chili recipe

It's Saturday afternoon and I'm sitting on my balcony enjoying the beautiful weather. The sun is shining, the birds are singing, and I see nothing but green trees in front of me. The smell of fresh baked banana bread lingers in my apartment. Everything is calm and peaceful at the moment. I can't think of anything that could be better than this.

As I mentioned a few days ago, I had a break from my classes this week. Andrew and I have been relaxing and having some much overdo fun. We've also had more time to spend in the kitchen, so there has been plenty of yummy meals. There was spicy Szechuan vegetables, chorizo "sausages", and baked lemon-herb tofu. My favorite though was the Sweet Potato and Lentil Chili from Eat, Drink, & Be Vegan. I loved how the sweetness from the sweet potatoes contrasted the spices. The lentils, black beans, and sweet potatoes made the chili very chunky, but it still had a nice smooth texture. On the side I had millet cooked with garlic and olives. It was a great meal. I was going to say that this is my new favorite chili, but I seem to say that every time I try a new chili recipe. Believe me though, it's a keeper!
